Chicken with Creamy Basil Sauce

Mayfield Mom, Pamela Burdell shares one of her family's favorite recipes. "This recipe is not only tasty, but also very easy - prep and cook time is just about half an hour!" This is perfect for all families with too much to do with too little time. Pair the chicken with steamed veggies and fresh bread and you've got a wholesome meal in a snap!

Yields: 4 servings


2 tablespoons margarine or butter
¼ teaspoon salt and pepper
4 boneless, skinless chicken breasts
1 tablespoon all-purpose flour
1 cup Mayfield Half & Half
2 teaspoons minced garlic
1 large coarsely chopped tomato
¼ cup coarsely chopped fresh basil



In a large non-stick skillet, melt margarine or butter over medium heat. Stir in salt and pepper. Add chicken; cook 8 to 12 minutes or until juices are clear, turning once. Remove from skillet; set aside. Reduce heat to medium. Stir flour into skillet. Add half & half and garlic, stirring constantly 1 minute or until slightly thickened. Stir in tomatoes and basil. Return chicken to skillet. Cook 4 to 5 minutes or until heated through. Garnish with basil leaves.
