Egg Custard Pie

This is a great dish to serve for family meals, pot luck suppers and gifts to anyone. It’s also the perfect dessert to make when you run out of time during the holidays.


3 eggs
1/2 stick of butter
3/4 c sugar
1 t vanilla
1/2 c biscuit mix
2 c Mayfield milk
nutmeg (optional)








Put eggs, butter, sugar, biscuit mix, vanilla, and 1/2 cup of milk in a blender or processor and mix well for one minute. Add remaining milk and beat for two minutes. Pour into a 9-inch greased pie pan. Sprinkle with nutmeg if desired, then bake in a 350 degree oven for about 40 minutes or until done. Insert tip of a knife in center and remove to test for readiness; if knife is “clean,” the pie is ready.
Serves 6 to 8.
