Sweet Potatoes on the Half-Shell
2 (12 oz) sweet potatoes
1/4 c dry milk powder
2 T Mayfield milk
1/2 c Mayfield lowfat cottage cheese
1 T brown sugar
3/4 T granulated sugar
1/8 tsp cinnamon
 

Bake or microwave sweet potatoes until soft. Cut baked potatoes in half lengthwise. Scoop out potato pulp into a mixing bowl, leaving a
1/4-inch shell; set shells aside. Combine dry milk powder and milk and stir until dissolved. Add milk mixture, cottage cheese and brown sugar to potato pulp.

Beat with a hand mixer until smooth. Spoon mixture into potato shells. For added effect, add the last third of mixture through a piping bag fitted with a decorating tip. Sprinkle a mixture of granulated sugar and cinnamon on top. Bake at 350 degrees for 20 to 30 minutes or until hot.
