Pistachio Fudge Protein Pops

Ingredients

  • 2 cups Mayfield® cottage cheese, blended
  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup maple syrup
  • 1/2 cup sugar
  • 2 tablespoons cornstarch
  • 1/2 teaspoon vanilla extract
  • 10 popsicle sticks
  • 1/2 cup semi sweet chocolate chips
  • 1/2 cup white chocolate chips
  • 4 teaspoons coconut or vegetable oil, divided
  • 1/4 cup chopped pistachios

How to

  1. Stir blended cottage cheese, cocoa powder, maple syrup, sugar, cornstarch, and vanilla in a bowl until well combined
  2. Stir in 1/2 cup cold water
  3. Pour mixture into popsicle molds, push popsicle sticks in, and freeze until solid, 8 hours or overnight
  4. To decorate popsicles, melt chocolate chips in separate bowls by microwaving them in 10-second intervals, stirring in between, until smooth
  5. Stir in 2 teaspoons oil to each until they reach a drizzleable consistency
  6. Remove frozen popsicles from molds and lay on a wax paper-lined baking sheet
  7. Drizzle popsicles with melted chocolate as desired and sprinkle with chopped pistachios
  8. Place back in freezer until ready to enjoy!
