
Pistachio Fudge Protein Pops

Ingredients
- 2 cups Mayfield® cottage cheese, blended
- 1/2 cup unsweetened cocoa powder
- 1/2 cup maple syrup
- 1/2 cup sugar
- 2 tablespoons cornstarch
- 1/2 teaspoon vanilla extract
- 10 popsicle sticks
- 1/2 cup semi sweet chocolate chips
- 1/2 cup white chocolate chips
- 4 teaspoons coconut or vegetable oil, divided
- 1/4 cup chopped pistachios
How to
- Stir blended cottage cheese, cocoa powder, maple syrup, sugar, cornstarch, and vanilla in a bowl until well combined
- Stir in 1/2 cup cold water
- Pour mixture into popsicle molds, push popsicle sticks in, and freeze until solid, 8 hours or overnight
- To decorate popsicles, melt chocolate chips in separate bowls by microwaving them in 10-second intervals, stirring in between, until smooth
- Stir in 2 teaspoons oil to each until they reach a drizzleable consistency
- Remove frozen popsicles from molds and lay on a wax paper-lined baking sheet
- Drizzle popsicles with melted chocolate as desired and sprinkle with chopped pistachios
- Place back in freezer until ready to enjoy!
